Independents: Don't understand the high praise for this.

Nicely made watch? Yes, at least the case and dial.. Well constructed? Sure. Value for money? Most definitely. Ground Breaking? Obviously Not. It's a quartz watch with a copy cat design that they borrowed liberally from Patek. There's some powerful influencer and promoters behind this brand. Surely

Regarding the question, I got the answer from Moser directly. The winding is 30 to 40 rounds to fully wind the watch and yes, the chrono sweeping second can be left on, although that increase wear and tear over long term if use indefinitely and also consumes PR.
