I know two things about this...

The first thing I know is that I'm not going to stop collecting because one watch is so unbelievably great that it destroys my desire for all others. That's ridiculous! If I became a one-watch person it wouldn't be because I found the One True Best Watch, but because I was tired of the whole watch collecting thing, and so wanted to settle on something excellent and appropriate and useful for wearing every single day. So it would have to be something really nice, but probably would NOT be something more valuable than other watches in my current collection.
Thus the second thing I know: if I wore just one watch every day, it would NOT be a watch with a date function that I needed to fiddle with month by month. The idea would have to be, this is my watch, I wear it every day, and it's always right. So either a time only, or a perpetual calendar.

Funny thing is I've never owned either a Rolex 1016 or a Patek 3940, even though I think of them as the two most ideal 'only watch' candidates. Maybe that's because I don't want only one watch?
