I own a Dato, 5270, 5970 and 5370 amongst many other Chronograph/Rattrapante’s and am generally more interested in movements than aesthetics. I agree that more attention is given to Patek finishing at the grand complication level. The 5370 finishing is no doubt superior to the 5270. The 5270 I feel is finished better overall than the 5970, but there is not much to it. The Dato finishing is on par with the 5270/5970, but I must admit falls short of the 5370.
I really struggle with the 5970, I love the aesthetics, yes it’s more symmetrical, but I can’t help think it’s NOT A PATEK movement! Why doesn’t that bother collectors? It’s like buying a Ferrari with a Skoda engine that has been tuned by Ferrari, not the same!
