When I was considering my purchase (or the purchase of a Royal oak in the future), the watch could only be considered with a bracelet. That's the way I see the whole complete watch construction and design and, aesthetically, the way I like it most.
This said, I don't consider there is the ultimate way (bracelet) and an undergraded way (the strap).
I saw the WG on the wrist of elegant people (suit) and it looked great, perfectly fitting the elegant overall picture.
So, my opinion is to take the one that speak the most to you. No problem with choosing the strap.
As for the dial, well, I tried the grey/black one which also looks very nice and taking the blue dial just beause it is the most famous doesn't compete if you prefere the grey/black. As for the chocolate provided with the RG watch, I don't have a guess as I never had it in my hands. But I really suggest to have one chocolate in your hands before choosing though.
I don't think the strap makes the Nautilus looses its balance at all compared with bracelet. It is just different from a look point of view.
What is maybe better in the bracelet is the work needed to manufacture it that way (much more time consuming of course and needing much more skill).
If I had to get one while prefering a strap I would not have hesitate to do so.
I suggest to take the one you really prefer.
