Platinum is harder than gold, but not as hard as 316L steel.

 

The industry has a vested interest in maintaining Platinum's mythical properties in the eyes of the unknowledgable.
Grade 5 Titanium (annealed) is harder than all materials used, except if Rolex uses full hardened 904 — otherwise it's not much different to 316L.
The cutting bits are probably Titanium Nitride coated, which gives them a hardness value at least 8-10x that of the material being machined.
