One suggestion, not really pilot related but off the beaten path
In that price range I would also look at (used) grand Seiko. Plenty of great options and if you don't love the bracelets they can easily be swapped for a leather or rubber strap.

Sinn is a good brand, serious watches not flashy, very tough in Stainless or Titanium
