As an owner of a vintage Vacheron & Constantin with the 1003 movement I will agree that the piece is delicate.  However, I don't wear it when it would not be appropriate.  


As for winding.. I think it just takes a light touch. The winding is not different than other manual wind watches just smaller.  I squeeze the crown with just enough pressure so that when the spring is wound the crown slips through my fingers and then I give it a few winds back.

As for size.  I would say this is a matter of taste.  But I find that ultra-thin watches can wear larger since they sit with such a low profile on the wrist. And at one point in time this size was quite fashionable. My Vacheron is 33mm including crown and I have ~18cm wrists.  I don't consider it to be "too small." And it does not look like a lady's watch as the case shape is very masculine.  My wife tried it on at one point and although it is the same size as her Nomos, it looked wrong.

I think that ultra-thin watches have a nice "cuff peek."  It is an effect that diminishes as the size of the watch gets larger.
