The Grand Seiko GMT's are great...

...but they tend to be on the thicker side, unfortunately. But if you're prepared to consider quartz, the ones based on the 9F movement are fantastic.
Otherwise, I'd get a Rolex Explorer II 16570 in very good condition. It's been my go-to GMT watch for the best part of the last 20 years. What I really like about is is that it doesn't scream Rolex in the way that a Submariner or a GMT Master does. Mine is a white dial with tritium hands / indices, which I love, but I think that the black dial version flies under the radar even more. Despite having a trained eye, I always have to look twice or three times to confirm that a person is wearing one such model. It looks great on a NATO, too.
Otherwise, I think there's great deals to be found for some of the older IWC UTC 3521, which is a very good model. It's a bit thicker than the 16570, but still acceptable in my view.
What the market really needs is a Tudor Black Bay GMT sized at 39mm like the BB58. One can always hope...
