It could be entirely subjective, but when I switch from, say, a steel Rolex to the same watch in 18k, the substantial weight of the precious metal watch makes it feel more durable in a way, even though the opposite is true. In comparison, the steel watch feels hollow, almost as if it were made of plastic or some other cheap material.
Also, 18k white gold and platinum can have a particular luster that most steel watches lack.
The weight of a platinum watch is hard to grasp without actually handling the watch. It is a unique pleasure to hold, especially a well balanced piece like a day-date or such with a matching platinum bracelet that prevents the watch from being top-heavy. The heft of the material always feels remarkable because most objects you are used to handling do not have such a sense of density.
Lastly, a factor that is actually proven to be beneficial for choosing gold is that it has antimicrobial properties.
It is interesting that many watches are very expensive because they are lightweight, such as the Richard Milles in titanium or TPT, but other watches are expensive because they are heavy!
