For intellectual appeal, then from your list the Richard Lange PLM; Journe Resonance; Dufour Duality...

In particular, Greubel Forsey and Richard Mille stand out because of their commitment to high end research that requires new thought and with that intellectual input from the person wearing the watch.  But will add in terms of specific watches:

GF 24 second incline and most of the work from GF - Greubel Forsey is quintessential intellectual watchmaking: research with testable aims and with the art and science of watchmaking foremost in their minds.  I just happen to adore the 24 second incline for the speed of the balance wheel and escapement.  Nothing else moves like it.  Then you have to start to think - where is the optimal speed / incline for the tourbillon?  And if you start down that path, you remain with GF.

RM018 - as well  as the RM009 (machining problems and materials for the movement), the RM018 is an intellectual headache.  Still in research/testing/construction, still a work in progress, not my style of watch, but on the two movements that have been finished, simply stunning on so many levels.  Most of the work coming out of RM at the high end (and with it the AP R&P crowd) fits in here. 

JLC Gyrotourbillon 2 (Reverso with conical spring); pushes new boundaries on spherical escapement.  Arguably JLC's most stunning complex movement.

HWRT Opus 3; brilliance in conception; a nightmare to solve; simple to look at the display; complexity for the underlying movement.
