Just my opinion, of course...
I think Katz's and Carnegie Deli are decent, not superb. For my taste buds, I much prefer Sarge's and the 2nd Avenue Deli (now on 33rd Street).
I think both have much better bread, meat, and pickles. 
And if you go for matzoh ball soup, Sarge's is my all-time favorite broth.
