I own the same Rolex except it is the "Batgirl". The watch fits well in the current retail price.
The first time I picked up my DJ, compared that to a JLC I also own I found the edge of the DJ bracelet a bit sharp. Again, the DJ sits in the right retail price point.
The Daytona is a different story. The finishing is much better than the "Batgirl". It is at a higher price point.
It seems you major complain is the finishing of the casing. The Pepsi is a tool watch. Treat it as one. Like others have commented, if you do not like it, sell it.
We should not be the marketing rep of Rolex. The enjoyment is done by owning and wearing it. Usually it takes a few weeks to bond with a watch.
There are many watches that have the same GMT functions of the Pepsi. It is more than the GMT functions people are looking for. It can be history and design.
The one important point you raised is the price (not sure retail or grey) and the high demand for it, don't seem to justify. It is a free market.
