5120 in my opinion
I like your list. I would say between baton hour markers and romans, either fit Patek well. I would say that the addition of the 240 movement which is pure Patek really puts the 5120 over the top for me and makes it, if forced to choose 1 piece in the collection sold today, my answer to "what is quintessentially Patek"
