1) Assuming not security concerns, or if one limits travel to certain places, or just doesn’t wear the watch in certain places then as I’ve stated many times my two more versatile watches are my Chronometre Bleu and my Nautilus 5711. These are the watches I travel with most, but I should note most of that travel is to counties where these watches present no issues or attract unwarranted attention. If I had to choose one it would have to be the 5711 solely due to the bracelet.

2) Again taking the same assumptions I outlined above I think this choice might require a watch that provided some flexibility in terms of look (bracelet and strap options), some functionality (why not if it’s the only one, a calendar, or a date at least, a chronograph maybe) and a size that would allow for versatility.
A White Gold or Platinum 36mm Rolex Day Date on a President bracelet. That watch could be a lot of things for me. I think I’d need a different dial but this is just an all time, all around, versatility classic.
