Is it the cask finishing ?

Hello Count , I’m not quite sure , but could it simply be the cask finishing - as in red wine , sherry etc ? I had a bottle of this Lagavulin 16 a few years back and do remember it’s excellent and exceptional sweet background amidst the peaty flavour , but have also noticed it in other Islay single malts ( which are of course generally the peatiest ) , as for eg the one below 👇
And incidentally, if you enjoy heavily peated single malts , the smokiest and peatiest of them all that I have ever imbibed ( to the extent that it can be hard to have more than a peg in a session, they generally numb your taste buds so should be had last 😂) and which I would highly recommend is any bottle of Octomore from Bruichladdich 👇. It’s like ingesting fire 🔥 😄
