Seconds hand "stutter" can be the result of misadjusted "end shake."
My understanding is that "end shake" is the degree of freedom pinions have to move: too little, they can't turn; too much, they may turn erratically. I have taken a watch like that to a watchmaker and he has been able to correct it without difficulty.

I saw this video and was really concerned about the movement finishing.
The movement looked terrible in this video. But when I saw a watch in person at a Bulgari store, the watch wasn’t nearly this bad. Not even under 10x magnification.

The macro is so insane in those videos that even Lange looked at some parts not that well finished, the hand jitter does not bother me either...
