For me, there are three watches: The Perpetual Calendar:
The Tellrurim:
And the Freak:
We were in the late 90's, early 2000's. Ulysse Nardin was an horological UFO at that time. Indeed, they made watches like no one else.
Since then, I felt a big love for that brand, and I managed to get some of these pieces, such as the Freak, and the Sonata, which was unveiled in 2003 and which I got in 2004.
A Genius brand!

Freak, 160, Sonata
I own a Freak, had the 160 many years. Never owned a Sonata, but lusted for a Silicium. What a piece.
Don't get me wrong, Sonata is very nice, but my grail would be able to:
Set two separate alarms, so I could leave one always on (e.g., 9:00 every day) and also sometimes set a second alarm as needed (just today, I also need a 12:00 alarm). With only one alarm, you have to change your intermittent alarm back to the daily alarm...
For me, the San Marcos with the blue enamel dials and the Trilogy, both from the 90s.
Beyond reach for a student... But after that, the Maxi Marine Divers, the Freaks, the Perpetuals (as you've pictured), and the Sonata. UN has such a rich diversity of watches. Interesting question that generated a lot of good remembrances. Cheers, John
Freak was the genesis of the brand for me.
This led to discovering the perpetual Ludwig, Marine Chronometer and Tellurium.
