Many stories behind this tradition but it goes something like - in order not to sever a friendship/relation the the giftee should buy the knife and the coin is the vehicle to such. It is a bit like when you offer someone a wallet you should always include a coin to wish them wealth and prosperity.

Do I (giftor) give her a coin, or does she (giftee) give me a coin?

...gives both knife and coin. The 'giftee' returns the coin as 'payment' for the knife. Cheers, pplater.
For conveniece
You would give the knife and the coin. The giftee would upon receipt give you the coin as payment for the knife. There is supposedly something about giftee purchasing the knife that removes the risk of a severing a relation. Bill
