Hi Adamska,

DRMW has some great suggestions for 1911's.  But I'd like to recommend one more if you're looking for a classic single stack:  Ed Brown Custom Guns.  The absolute best beavertail and thumb safety parts and contours IMHO.  And he has a Cali compliant version that's priced competitive to Les Baer.  
For exotic hi-tech 1911's then the STI/SVI variants are the best way to go.
And more tip, the different style hammers from SVI are cool looking but some designs like the SHPD version is very hard to manually cock the hammer.  Not that you would do it very often but something to think about.  Either way it's very easy to swap out the hammer/sear and parts are so good now it's almost drop in for a crisp and light trigger job.
