If I had to choose, this one would be my pick. Why? For the grand feu enamel dial, first, as they are few watches and comapnies to have the knowledge to make such dials, and to work on enamel, with UN, Patek, and JLC. Then because its bi compax look speak... 

The enamel dials are probably made by Donze Cadran, which is the only company able to make large quantities of traditional, oven-fired enamel dials. They supply dials to Daniel Roth and possibly Jaquet Droz, amongst others. These images from the Donze Cad...
