from experience, I suspect you may be overthinking this
I used to worry about this a lot but I have learnt that only a miniscule fraction of people pay attention to watches at all and if they do they are not unlikely to also be enthusiasts and appreciate them for what they are. I work in academic medicine and very few people have any clue what I have on my wrist and even fewer care. I don't have any watches that fit your definition of flashy however, although I do have some that are expensive out of proportion to what would be expected from my line of work.
The flashiest watch worn to work by any of my acquaintances is a rose gold Breguet 3795 (tourbillon perpetual calendar). Even so he has told me that I am the only one who has ever shown interest in the watch.

For your situation
I agree with your thoughts about flashy watches in your work environment. Just wear a classical independent with fantastic finishing and no one will be the wiser. For your hobby it sounds like it's anything goes.

A friend of mine is a finance department chair at a major US university.
He loves his Rolexes (Rolii???) and wears them freely. I asked him about it, as he was doing from the start of his academic career, and he said there were absolutely no comments/problems whatsoever.

My rule is to be as unobtrusive as possible and fit in with the environment. Unwanted attention can be uncomfortable and in some environments, dangerous. In other situations, you'd call attention to yourself if you were "underdressed."

I would agree with the majority of responses. Wear whatever you like whenever. However
I do tend not to wear yellow/rose gold (sports) watches (Rolex) to work as I feel a somewhat more somber profile doesn’t hurt business.
