At various stages of their evolution. Never (with the exception of the 2009 vintage) before at least 10 years. But I have found very interfering discoveries where a particular wine will taste remarkable after 15 years and then not again until 25+ years. So if I’m fortunate enough to have 12-24 bottles of a particular wine I like to sample it every few years and make notes. Experience is my method of learning. Cheers
