Update 3: Feeling less downbeat

So, apparently the consigner of the watch isn't bothering to meet with the police, which is something I expected. As a result the only proof of ownership is mine.
Also, I was informed by my lawyers that there is a law enforcement treaty between China and the UK. As a result, stolen items such as my watch, can be restored to the UK by official request.
I'm trying to go down that route, as the most important thing to me right now is to get the watch out of China. However, there are two things that need to get done (and which are taking time). 1) The London Metropolitan Police need to provide me a copy of my criminal incident report. This will take time as they have tons of document requests at this time of year. The officer helping me is unable to get the documents herself. 2) The UK needs to submit a formal request for the stolen watch back. *That* might be quicker, but I don't know how long it will take. As it will be an official request, I'm imagining quite a bit of paperwork.
Updates will follow.
