Besides trying on both in the metal to check fit and wearing comfort, I would give the edge to 2 over 3 hands. I used to be of the view that a running second was a plus but after getting my drive de cartier (handwound, 2 hands) I have changed my thinking ...
I would personally choose the 37mm for the greater power reserve and the more consistent “less is more” aesthetic.
But, as always, it’s a matter of purely personal taste. The 35mm is a great choice too if you want a less empty dial and a less slowly moving hand. Imo, even though it’s the entry level model, the Saxonia Thin is one of ALS’s best pieces.
The 37mm. The pure look. Better caliber with exposed ratchet & barrel wheels and click spring.
But...go with the one that makes you smile when you look at it - and that way you truly can't go wrong.

Saxonia Thin for me
Even if I like small seconds usually, I find the dial of the Saxon Thin more elegant. And 35 mm is a bit tiny IMHO. All the best Nicolas
I've owned both and I stuck with the 35mm
Even though the movement in the Thin is even more fabulous, I found it a little too stark. The slightly more filled dial look you get in the 35mm with the sub seconds and the minute markers give the 35mm a much warmer look (even in white metal!). ...
It depends on how you plan to wear it.
The small seconds can be useful on a daily basis but if you’re looking for an elegant dress watch for special occasions, the Saxonia Thin is as good as it gets.

my current collection consists of all steel sports watches. I am just looking for something a little less chunky this time 😅 (I usually tell time by looking at my mobile phone though)

I almost bought a white gold piece, but instead came back to another rose gold. All my other watches are steel, so the rose gold tone switches it up . Good luck and keep us posted! If you have the means, I will certainly agree that you can’t go wrong with...
The 219.026 for me
The dial is more interesting to look at. Have you checked out 1815 yet? Either previous gen 36 mm or current gen 38.5 mm? Having owned both, I’d highly recommend them. Especially worth considering in this ALS price category
the 1815 38.5mm
was actually in my consideration. I just prefer the one color hands and hour markers this time.
