What a nice query, Joe..although not easy for me.. but I'll try..

Not easy, as I do not own enough colored dials, yet alas..
1/ definitely one always is black, especially if the layout of indices and markings
contributes to the contrast, and supplements the character of the piece, such as in the DSA.

2/ Next to humbly mention a colored specimen - in blue, with some funkiness
LeCoultre Lady in blue from the 70ies
3/ and yet of course some nice silver or white:<
- here with a sunburst finish, a clean dial and RG contrast
( sorry for the lousy photo, the Geomatic is difficult to catch)
Sunny and shiny with a clean face
- anf finally maybe a simple, but classic layout, just in plain white
where sun can augment the pleasing details of the artwork and indications
