Just a few years ago after many decades of using and collecting fountain pens I discovered Japanese pens thanks to the enthusiasm and passion of a good friend and fellow collector here.
I had never paid the due attention to them previously and it was discovering and enterily new world both for the design and finish of these pens and for he incredible array of specialized nibs,specially in brands like Sailor.
I started collecting and writing with these brands: Namiki, Sailor, Platinum, Sailor and finally discovered Nakaya and fell in love with it.
I bought them through a USA distributor and I´m sending the data by PM. It belongs to a well known Nib-Meister who can sell you the nib as factory or customized to your specs. So you may contact him regading iyour left hand writing.
He usually has a good stock of these pens available or can make an order for a specific model or color.
Note that Nakaya come in two main variants: those called "cigar" don´t have a clip on the cap and those called "writers" do have it. That´s a thing of personal taste and how you carry them daily.
Most models come in both types.
You have a lot of models to choose from and each model in an incredible variant of colors and textures. You have to explore the Japanese names for each color or texture.
Nibs are the same of Platinum brand as Nakaya is the custom line of that Mother Brand. They offer some special nibs like the Music type which is very interesting to write with,.
I share with you the taste for the brands you mention: Montblanc, Lamy and Rotring. Another high quality brand I love so much is Pelikan of which I own a large collection both modern and vintage.

You´ll find some pictures and names of my Nakayas and samples of writing there. I wish it will help you as an introduction to the brand. (The models I presently own are Dorsal Fin 1 and 2, Portable, Neo Standard, Naka Ai and Piccolo. )
Regarding the Hemingway I feel most have been regarded as collectors pieces so there is a chance of getting a brand new one or with very little use. Prices are always high though.
I feel I deserve the pleasure of using my Hemingway and sooner or later will ink it. I understand you with your 65 years old watch as it happens the same to me with a few of my watches.
But not to use a watch or pen is missing a big part of the enjoyment of owning them I feel.
