People who worked in the movie product placement business (but not specifically for the James Bond movie) told me that EON Productions (movie company) tried to make it accurate by including the Rolex; Rolex wouldn't loan or gift the movie producers a watch to use as a prop, so they went out and bought one. But eventually Seiko came knocking on the door and offered money and watches for placement. So EON Production went with Seiko and then later Omega. I don't know about Aston Martin, but it was definitely a hit in Goldfinger.
