I'd prefer it, primarily because of a long affection for the service and values at Tiffany. Whether I would pay more is a different question.

i prefer simplicity - without the tiffany on the dial. one reason that i like patek watches is the fact that they are simple - even when "complicated." if i am going to have something additional on my dial, i'd prefer it be functional (date, small seconds...

Yes you can request that Tiffany is not on the dial. But if it is already there they are unlikely to replace a dial. Where on the dial the "Tiffany" is placed is determined by Patek. Which watches are Stamped with the Tiffany name is mostly determined by ...
