You definitely have to stick within one hundred in the gear train of a watch but couple of microns, even in concentricity will still ensure a good performance for most of the horological usage.
In the jewels' tolerances, you usually consider 0/+5µm as a rule of thumb. So, going under the µm in concentricity wouldn't make a lot of sense, in my opinion.
And not even considering the measurement solutions to control it...
