I think, JlC is the best choice. The dial for a 80 years old watch is perfect, a nos dial destroy this watch. Nothing is bader than a overrestored watch with 80 years. Look at the 20x lifted 80 years old women and you know what i mean. [nt]

In restoration but i d get in touch with JLC before anybody touch it.
I'm no expert in JLC, but I agree I'd consult with them or an AD before anyone else be authorized to work on such a fascinating watch..
..then if movement and case will naturally require some work, for sure I'd leave the dial as is, it carries an incredible charm! Please keep us posted!😉

Most probably, the Manufacture can solve all your issues. Two things: It will take a lot of time, and the bill risks to be " a bit " high... ...

I believe JLC is reasonable compared to say..
Patek when it comes to cost. But be prepared. Regardless they will quote you before performing the work and you should be able to do a line item veto ( yes regulate movement, no don't replace dial, yes polish the case) to your liking. But I would let them...
