Thanks for the inputs guys! Additionally, the case isn't so banged up that it needs the polished finish, just scratches all around. The change is purely aesthetic. I have also seen versions of the polished bezel in the black dial / WG version around the net. Perhaps the newer watches come with this updated look.
The problem is that I can't get both versions side by side in real life to make a comparaison.
The brushed bezel does give the watch a more casual / contemporary feel, whereas the polished bezel has a more classical / dressy feel to it. The Legacy Machine line takes its inspiration from horology of 100 years ago, so it makes sense that the watch looks more classical, but with the LM1's case being 44mm it is decidingly contemporary.
Both look very good, and I can't decide. On the one hand I agree with some that I should keep it as original as possible, but as MB&F updated the watches with the polished parts maybe they think it is a better look overall?
