Some thoughts...
In terms of who makes them, you are absolutely right that the folks at Sinn are not blueing the screws - the whole movement is delivered by UWD - who make movements for some other German watch brands. I guess - given Lang's heritage - that they may well be blueing their own screws 
As for the market - hypotheses only, as I neither own one nor know anyone who does - I guess most if not all of the 55 will get sold in Germany. Germans are often very proud of their own products and Frankfurt being the financial center there will be enough well heeled buyers to get one. One could certainly go for something more established or classic, such as GO or ALS but both choices are more expensive - like for like - and (possibly of importance to some) owned by Swiss multinationals.
I guess it also provides the brand itself with bragging rights - i.e. we can do so. Same with the in house Robert Mühle pieces from Nautische Instrumente Mühle from Glashütte I suppose.

Your comments open my eyes. I really have viewed Sinn as a workhorse type brand, rugged, but making many designs other brands make, especially in pilot form. Also making many rather weak designs... IMO... but having a powerful brand when it comes to tank-...
