No bad choices but it sounds like stainless is your preference since weight isn't a consideration. I think you need to go to the boutique and try them all.

The stainless and titanium do look and feel different so really a personal choice. If it were me, I would get the titanium black dial for the lighter weight, higher scratch resistance, brushed finish, and display case back. If its your first 1315, it's nice to be able to see what you paid for and the (thin) sailcloth strap will have an easier time managing the lesser weight of the titanium. I have both a titanium 500 Fathoms and a stainless 50 Fathoms and I think I would be annoyed with the closed case back of the stainless watch if I hadn't had time to enjoy the view of the movement through the titanium version.
Something else I noticed last week is there seems to be two different versions of the bezel, one where the markers seem flat / flush with the surface of the bezel and one where the markers and numbers seem sunken or recessed. Sorry for the crappy pics but if you look at the bezel of the watch on the left the numbers and markers look very flat while the if you look at the bezel of the watch on the right, there seems to be a slight shadow on the markers/numbers and more of a 3d effect. My 500 Fathoms is like the watch on the left and my 50 Fathoms is like the watch on the right. Minor difference to be sure but I would say the version on the right does come off as a little flashier/more reflective.
Also saw this on black dialed models, the stainless models on the left has the "3d" bezel makers and the ti Grand Date modfel on the right has the flat bezel markers.
