Find Thiers a nice mix of old family/industrial brands and emerging independents + artistic that have understood they need each other, and I believe we need really need that community thriving.
Will stick to Japanese for a Santoku, Goyon Le Thiers for small knifes, and traditional Thiers for the rest. Haven`t made up my mind whether that will be Goyon or K Sabatier. Somehow like the P`tit/Grand Tradi for basic all around usage, the P`tit in particular. Similar in purpose to the nice old Opinel displayed by the good Clemens. Always at hand, and good for most trivial usages.
About to renew all "kitchen tools" and Thiers is it for the knifes. To me. My brain is still debating De Buyer Vs Mauviel for cookware ++, I will do fine with both. For our American friends, I`d look to Miami and stay off the (hot) brass handles: Here`s the best starting kit for discovery:
