Amanico, don't try Japanese knives...

 

I used to swear by Made In Germany knives.  Solingen, Solingen, Solingen.  So one day, I'm helping a classmate of mine settle into his new home.  He's a surgeon and he's just moved and I have been given a budget to outfit the home.  When it comes to the kitchen, I obviously buy Wustof brand German knives with a full tang and solid construction.  My friend, being a surgeon doctor, cuts one onion with this (maybe half, he never finished it) and insists that they aren't good enough - insisting that I bought defective knives.  I try cutting the onion and I said "feels good to me, sharper than my knives at home since these are new."  So - that evening the meal is never prepped and never eaten.  We eat out and go to a kitchen store where he buys Japanese kitchen knives that cost about 4-5X the price I got.  I got a 7-8 piece set of Wustof Classic knives around $250 USD and he got a 9-10 piece set of Japanese SHUN-brand knives that was around $1200 USD.  I eagerly try the knives - with the assumption that I won't be able to tell the difference.  Well, in 30 seconds, I realize they are so much sharper that I find them almost dangerous to use.  I quickly get used to them and I agree they're better.  What can I say...  Surgeons know better than I do.  Umm...  Hmm...  Now I want to replace my German knives.
