I've seen and tried both and have owned full white gold Rolex Daytona.
Everose is luxurious and warm, perhaps more approachable than yellow and goes beautifully with the bezel colours. Yellow is classic and timeless and a great match with the blue bezel and dial. I wouldn't call everose low key but it is more so than yellow. Full gold Rolex is a heavy but balanced wear, certainly appealing in some regards. I think the only way to know if it's for you is by trying it. Not very helpful maybe but that's how I know a full everose GMT or yellow or white sub is not for me. I have no interest in full, or two tone, gold professional Rolex. That is completely personal and subjective but luckily I only have to please myself lol! Plenty feel the opposite and have decided by trying it.

I declined on the GMT in full everose
because I personally don't like the case - however, the color is superb!
Even though I have a GMT (different brand), it's not my favorite complication...
it sounds good on paper, but I tend to keep one time zone on the wrist and the reference time zone on the phone. The one situation I used the GMT was when my head office (manager) was in Europe and I was working in Japan... just my opinion ;-) Casey
