Ask the jeweler...  These are basic questions that even the less experienced sales people can answer truthfully and competently.  These are also uncommonly basic questions that you can determine with some very basic knowledge and logic, so I hope you don't find my responses too basic. 

1.  When you polish gold, you are removing metal.  Therefore, a deep scratch cannot be polished out since you would be removing too much metal.  Also, since you're removing metal each time you polish, obviously, there's a finite number of times you can polish a watch before it can no longer be polished (the case will be too thin after several polishings) and it will start to change the appearance and shape of the watch.  All metal watches generally dent easily.  I'm sure you know that gold is a soft metal.  Thus, gold being softer than steel, it has the potential to dent more easily.  I hope I answered all your questions to your satisfaction. 

2.  Again, this is something that is probably best answered by the dealer.  I hope I am understanding your question correctly...  Obviously human beings come in different sizes and therefore their wrist size varies.  Rolex makes different sized rubber straps, but they can't make it in every single size as the logistics to stock so many would be cumbersome, impractical, and un-scale-able.  Therefore, the strap is designed to be shortened by the dealer. You shorten the strap by cutting off the rubber.  Obviously, when you cut off the rubber strap you can't put it back on again.  So therefore, once it's adjusted to your wrist size and the rubber strap is cut, it can't go bigger, it can get smaller, but never bigger.

That's right, it's not a strap that gets cut. My mistake. Oops. I can definitely understand that if someone wasn't explained this thoroughly and had the assumption that it was supposed to be cut, that one would get confused. My mistake.
