Well, I agree that MRs are also a little easier to create today with the tools and computers we have
Nevertheless, aside of the technical side, there is also the decoration (finishing), size (Patek are usually providing smaller cases), spirit and all the history and experience Patek has acquired that we find in a Minute Repeater. Some complex new displays you mention don't really I think replace the charming sound of a MR even if some might be even more complex.
The question of the sound is very important and it is finely tuned by the brand as well. It is not imho only a question of higher sound but the warmth, tone, rythm are also important and these are fields Patek is known to master regarding the MR.
But you're right that there is also a demand from clients and watch fans for other kind of high complications that are made possible today thanks to the market that allows such prices (thus research and developement) and the developement of tools (CNC machines) and material (Ti, Silicon etc...).
Patek is remaining in the traditional field indeed but I would add that they master it so well that it brings a charm and pleasure that won't imho totally be replaced by the "new" complications.
