Vintage Vs New
I am also referring more toward a vintage Patek more so than a relatively newer watch. I think papers and box is extremely important if looking at something relatively new. However, a 30-60 year old watch may not have the original box and certificate of origin.

I pref to have a full set with all my watches .
With some older models its sometimes difficult to buy a full set but if the watch comes with papers or certificate then i will try to hunt for a original box afterwards.
You buy the seller!

For me it give the sign a pre owner handled a watch with care. Buying a watch without papers and box is sometimes cheaper, and feels a watch wanted in a hurry. Only if a watch is rare and unique and took years to find is an exception.
