Greedy or not, we can only guess as we will never get access to margins or R&D budget numbers. But your main point is absolutely valid, the collector's community does not represent the average PP buyer. For a "boutique" brand such technical developments might make more sense as they can be monetized more easily. PP also operates differently in their high complications segment, minute repeaters with calendar are instantaneous.
As for the question whether instantaneous means "always safe to adjust" - I know that this is the case for most contemporary Rolex movements and for example the FP Journe octa perpetual. It might depend on the specific technical solution.

I’d set the time to 6am, then fully cycle the datewheel, and then set the time. Monitor it to see that it changes and displays properly thereafter.
