In general, I would not “redo” a previously untouched dial, even if the redo is to be done by Patek. With almost all redone dials from 30s-60s there are clearly visible vertical lines and some of the enameled signature and tracks are diminished in height and even have small gaps. None of this applies to your dial, which looks magnificent. It looks factory fresh from the 1930s. Amazing! Gets me thinking that maybe my old viewpoint needs to be discarded.
