A firm believer in letting even mature wines decant and open up. The 09 is just entering its drinking window now and in my opinion would greatly benefit from a few hours decanted before enjoying. I really geek out when I open a nice bottle and do experiments like having the first few sips after 1 hour and then hour 2 and so on. It should be great with beef or game. It’s a blockbuster. Huge, masculine yet refined. Enjoy!

Sometimes (I should probably
go to a few tastings) I’m not sure what to expect from Bordeaux… with west coast wines the results are much less subtle (Opus, Dominus etc) or even Italy (Gaja, Bertani) but with Bordeaux and Burgundy it’s harder for me to judge especially when you factor in price.
