One of my three sons is graduating an Ivy League school soon. I am very proud of him. He is not exactly shy nor reticent, rather he does a weird thing that in our family is unknown: he thinks before he speaks. I believe he got that from his mother.
His friends are all headed to the big PE and IB houses. He will probably too, though he is pursuing a double degree MBA with Law. I write that because even though some of his friends are highly brand aware, he prefers it simple. He is not into visible brands, and dresses simply yet elegant. There is definitely an eye toward Loro Piana and Zegna style clothing, but at his age and subsequent budget that requires parental gifting.
I'd like to buy him a watch. He likes to wear blue, and is not into complications. Below are some watches that might fit the bill. Am I missing something? I am willing to go €7-9k, and I am not interested in buying used. He is a big young man, tall and very strong with big arms and wrists. Over 190 cm and 100 kilos, he is a rugby player.

If it were me, I would think the GO is quite nice. It also has some nice movement finishing that can be admired; the others are also well-finished but perhaps less intriguing (more colour on the GO). The Omega looks great and has a Master movement inside, so it'll be very reliable and accurate for a long time. The IWC looks nice but the blue was very flat in person; I wish it was closer to the photos. I think the Grand Seiko is very nice too, and has the most WR. Spring Drive is of course very neat technology. In a similar aesthetic but slightly finer (thinner, etc.) dress variety is the SBGY007 Omiwatari. It is very elegant and is manual wind but has the junior Credor movement inside and extremely impressive finishing for the price.
Among these 3, the Glashutte, definitely. He will go off the beaten paths, elegant, discreet and a Connoisseur's choice.

I'd recommend an Omega Seamaster Aqua Terra. 41 mm, SS with blue dial. As an active sportsman, he can change the strap for dress or sports

Having been in a somewhat similar situation recently
Depending on how much the element of surprise matters to you, there is value in discussing it together. In my case my son turned out to be a big skeleton dial (and manual movement) fan which I would have never suspected. Doing the research and the purchase together was a great father and son bonding experience too so I have no regret.
In your selection the GO would definitely be the least common sight but considering his size I'd go for the IWC if it was me. Keep us posted!

The occasion was less grandiose
And the budget a lot smaller since it was only a minor graduation but in the end we settled for a tier-3 swiss brand with a fairly highly modified ETA movement but it just reminded me that there is value going through the process together from an educational and bonding point of view.

I would usually give that advice too. I am lucky in that I get to spend a lot of time with my boys, in this case I really want to suprise him.
What does he like to wear currently (assuming he regularly wears a watch)? What did he wear during his internships?
I can appreciate and respect that he is his own person, but especially given the finance world he is going into, there’s no reason for him to compromise/eliminate any particular brand. As such, it’s not unreasonable to consider a Cartier from the Santos line since there are pieces that do double duty as elegant as well as masculine/strong design features that seem to reflect his persona. Otherwise, of the pieces you mentioned, the GO is indeed an impressive offering. I like the IWC and Omega too, based on photos. Ultimately, it’s an excellent and well deserved gift, congratulations in advance.

and he definitely eyes mine, but I think he may want to veer off my previously trodden ground. I just love them, especially since I'm also a bigger man, so I like the way they wear.

The omega should fit the bill and he can change to a rubber strap
And it still looks sporty.
A Girard Perregaux Laureato even at 42mm. Is fine in Blue dial. 😊
Mine though is in 38mm. 42mm is still a gem of a watch. Great for your son. It's slim sleek and sexy. Stylish. My opinion.
