Consider the "sapphire sandwich."
Love mine. Classic Speedy but with sapphire crystal (robust, hard to scratch) and display back (showing the beautiful 1863 movement which is finished to a higher standard than the regular one with 1861 movement because of the display back). Great modern Speedmaster to enjoy.

There are so many Speedy's to choose from, but I can't think of any better start than the classic Professional ...
Open or closed caseback are personal preference but I'd highly recommend the more traditional option of hesalite crystal ...
