According to a watch blogger

It could likely be supply and procurement which had influenced the decision. He saw my trimetal seamaster, which is built in grade 2 titanium. I was curious and asked why they didn’t build it in Grade 5 instead. He said, the case construction is made by a supplier he knows, and it is pretty complex, making grade 2 and easier metal to use.

Grade 5 is harder to machine, and this adds to cost.
