The Sapphire caseback cannot be engraved upon, the crystal is actually very very thin (despite appearances) and cannot be engraved upon. Your Reverso Grande Date would not be able to have any engravings on it unless you changed out the case to a case with a solid metal backing.
The engraving program at Jaeger-LeCoultre is among the best in the industry where engraving is actually perceived as an art form that requires months if not a few years of training and decades of mastering.
Get a normal Grand Taille and get it engraved, or get the Grande Reverso Automatic which has a solid back.

Welcome here, first! An advice: Engrave as you want the case back of a Reverso, but NOT the Sapphire on the case back!!! AFAIK, JLC won't accept to do it, and therefore, even if it was possible, you will modifiy the apsect of your watch, and you won't see...
