My Fish Crowns Have Always Come Back
They seem to respect fish crowns, because I never specifically asked to preserve them. That has been my experience with multiple services / multiple watches.
However, I did once request to have tritium parts on a 3705 returned after updating dial and hands, and that request was ignored. I had however approved the update.

I recently sent in an older titanium Aquatimer
It didn't have tritium in the first place, but they did exactly what I requested and refrained from exactly what I requested they refrain from. It was quite refreshing!

My Big Pilot was refreshed,
and they left the fish crown and patina dial with a bronze hued date frame. My only gripe is I had a Ti Aquatimer GST and the lug pins were replaced with polished steel, not blasted titanium. They denied the pins were different which was blatantly obvious...
