Are you looking for customized tourbillion, or a stock watch from an independent?
If it is the latter, then my suggestions are
Gronefeld: Decennium Tourbillion (10 pieces, but some still available). There are also some unworn parallax tourbillions on the secondary market.
Gruebel forsey: 3 models to choose from, ranging from the 24 second Tourbillion to the quadruple Tourbillion and double Tourbillion 30 degrees.
DeBethune: the kind of two Tourbillion comes to mind.
These are my 3 favorite independent brands, in that order.
L.U.Chopard has a few models as well.
Journe obviously has several Tourbillion’s in his catalogue

Not sure about who is and isn't taking orders these days...
But some of my favorite independent tourbillions would include Ferdinand Berthoud, Laurent Ferrier, Akrivia, DeBethune, Christophe Claret, and Greubel Forsey.

While the GF is a more "established" brand, I think the Fraessdorf is a rugged daily useable watch. ...
