We all knew that ( and sometimes still know that ).
There are some lines, such as complications ( one per brand ), or themas ( Chronos, Chronometers, GMTs, Minute Repeaters, Alarms, and so on ), or one brand ( all the watchesz of a brand ).
There is another line: Buy what you like.
In any case, take your time, read some articles on watches you like, TRY them,... Take your time as learning to know the watch you desire is a big part of the fun.

Collecting is a journey. You are thinking about the right things. It won't happen overnight, and you will enjoy it more as you research and experience your interests. I fall into the "buy what you like" camp, and wear every watch I own.
The only advice I can give you: take your time!
Read, learn, listen to your heat, define what would be the most appropriate topic of the collection. You feel lost? We all feel lost and we will always feel lost so don't worry about this ! Fx
