Poy, i would say that a jump hour is where you
can only see that particular hour in the box and it jumps instantaneously. the
Chronoswiss delphis is a jump hour, but a seiko discus is a digital display as
the time discs are continuously moving.

the Lange with digital hour and minutes is an
interesting one. by definition its digital as all the digits are numeric, but
its also a jump hour as the hour jumps instantaneously.

 
if you want to exclude jump hours i would
personally exclude the ones with a minute hand, but include the ones like the
lange.

so my definition would be any watch where the
digits rotate around at the correct pac they would do if they were
hands.
